To manufacture this food speciality we use only spelt of the “Triticum dicoccum” variety, the hardest and most precious variety.
Our spelt is completely organic and it is 100% Italian origin. It comes from Tuscany and from Umbria
, where our farmers cultivate it only for us with so much passion, respecting and keeping that natural balance which makes a lot of good to mankind and that is so important for us. We mill it personally using a unique method enabling us to manufacture a 100% wholegrain flour. The particularly adapted working processes has been studied just for producing our momenti Speciali and for giving them all the unique taste of the home – made pasta.

The result is a delicious food speciality manufactured only with spelt and water, with a unique and unmistakable taste, red-brown coloured that only a wholegrain spelt speciality has.

It contains iron: 4,01 mg 28% RDA
The iron values contained in this food speciality are higher than the values usually given for a normal durum wheat pasta (INRAN data bank ). This food speciality contains in average:
- almost 3 times the spelt quantity contained in a normal durum wheat pasta
The fibre values contained in this food speciality are higher than the values of a normal whole durum wheat pasta (INRAN data bank). This food speciality contains in average 40% more fibres than the ones contained in a normal whole durum wheat pasta


Food preservation: keep in a fresh, dry, clean, odourless place, out of sun rays
