Castagno wholegrain spelt penne with walnut and cherry tomatoes pesto
Ingredients for 4 persons
350 gr Castagno wholegrain spelt penne
1 abundant handful of fresh basil leaves
1 garlic glove
3 spoons of grated Parmesan or pecorino cheese
10-12 crushed walnuts
extra virgin olive oil
1 handful of cherry tomatoes


Preparation:
Prepare basil pesto: crush basil leaves in a marble mortar (much better than wood mortar) until they are perfectly macerated. It is better to crush just few at a time, adding them already cut with the hands (not with knife blade!). Then add grinded nuts and mix well by adding also oil, grated cheese and pressed garlic.
Cook Castagno wholegrain spelt penne in abundant salted water for approx 5/6 minutes.
In the meantime put pesto in a saucepan and when it is hot add some spoon of pasta cooking water. Increase fire and add cherry tomatoes cut in cloves and without seeds. Sauté shortly and then, when cooked, add also pasta. Switch off fire, mix well and serve.
