Castagno wholegrain buckwheat sedani with nuts, sausage and spinach
Ingredients for 4 persons:
350 g Castagno wholegrain buckwheat sedani
150 g shelled nuts
150 sausage
300 g spinach
1 glass dry white wine
1 onion
20 g butter
extra virgin olive oil
grated Parmesan cheese
salt
pepper


Preparation:
Wash and chop spinach not too finely. Cook Castagno wholegrain buckwheat sedani in abundant salted water for approx 4/5 minutes. Boil spinach separately for 5 minutes then drain. Peel and chop onion finely, then fry it in a pan in not much oil. Add sausage crumbled with the fingers and spinach, than brown for a couple of minutes and add wine. Let it reduce and regulate salt and pepper. Continue cooking for 10 minutes. Drain pasta, add sauce and nuts, half cut half whole. Add butter flakes and grated parmesan.
